Leiths Techniques Bible

I ordered this online purely as an exercise in reminiscence: as a student at London University I did a Saturday morning course at Leiths School of Food and Wine off Bayswater Rd.

This brought back all the things I had been shown, taught and told but had forgotten. Especially useful this book tells you some of the science behind the dark art of kitchening (not all of it obviously) but the sections called ‘What’s gone wrong when ….” are simply a joy.
