The humble potato: botanically it is the swollen root tip of the Solanum tuberosum. The humble ‘spud’ was brought to Europe by the Spanish in the 16th Century having conquered much of the Inca empire.
To be honest I probably have more meals that involve potato than just about everything. For nearly every recipe (except mash) I leave the skins on. I say this is because it is nutritionally better but it may be because I don’t like to peel ’em.
